All series of mixers produce a two way mixing action. The general movement of product is to the right or left depending on which position the "Forward" or "Reverse" switch is set. This action results in a minimum of temperature increase and less mastication of the product for a given mixing cycle time.

The frequency of switching the mixing action from right to left will depend on the product. In general, the "Stiffer" the mix the more the paddle rotation should be reversed to get an even mix. With a very fluid mix it may not be necessary to switch at all during the duration of the mix.
