With the Vulcan 60SC-6B24CBN Endurance? gas restaurant range, chefs can simmer sauces and saute vegetables with the six left-side open burners while searing chicken or steak on the right section's charbroiler. The three front burners feature corresponding 12-inch by 121?2-inch heavy-duty lift-off cast grates, while the three rear burners are built with 12-inch by 141?2-inch grates capable of accommodating large stock pots or sauce pans. To conserve gas, one shrouded flashtube pilot system powers two burners. The 24-inch-wide charbroiler is built with four 16,000-BTU burners for a total of 64,000 BTUs per hour. These burners feature supercharger dividers, and operators can adjust burner heat with the cool-to-the-touch knobs, and to remove food residue, the extra-deep crumb tray can be pulled out.
The oven's base features a standard oven on the left and a convection oven on the right to accommodate an array of baking, roasting, reheating, or broiling needs. Despite slightly different dimensions, both ovens boast baker's depths that accept 18-inch by 26-inch pans in side-to-side positions. The ovens' two oven racks can be raised or lowered in four positions, and for simple pan insertion and removal, their doors are hinged. Operators can adjust temperature from 250 to 500 degrees Fahrenheit with the corresponding thermostats. While the standard oven operates with radiant heat, the convection oven uses a fan to circulate hot air. For simple cleaning, their door panels and bases are made of porcelain.
Despite its four-in-one configuration, the Vulcan 60SC-6B24CBN commercial range measures 60 inches wide by 34 inches deep by 58 inches high to fit compact kitchens. Its sleek stainless steel construction complements most existing pieces of equipment and provides long-term rust and corrosion resistance. Because its frame is fully MIG welded, it maintains its integrity through high-volume use. To reduce the chance of rocking or wobbling during operation, it's mounted on four 6-inch adjustable legs that can stabilize the unit on uneven surfaces. Powered by natural gas, this 278,000-BTU unit requires 1-inch rear connections.
