The 99,000-BTU charbroiler is lined with six burners that have separate pilot lights and controls so staff can adjust each burner's heat independently. For uniform heat distribution across the grates, the charbroiler features char radiants with stainless steel supercharger burner dividers. Each burner has a corresponding cast iron grate that's slanted to facilitate fat runoff and minimize the risk of flare-ups. To ease cleaning between uses, the grates can be lifted off, while the extra-deep crumb tray collects food debris.
The convection oven base relies on a circulating fan that generates heat to cook dishes quickly and evenly, and operators can adjust the temperature from 175 to 550 degrees Fahrenheit with the thermostat. Its 27-inch-wide by 27-inch-deep by 13-inch-tall interior comes with two oven racks that can be raised or lowered in three rack positions. So users can simply insert and retrieve food pans, the heavy-duty oven door features a counterweight hinge. Because the oven's cavity is porcelain, it's simple to wipe clean.
