To warm, bake, rethermalize, and roast product quickly in both of the Blodgett MARK V-100 DBL full-size convection oven's baking chambers, tubular heaters generate temperatures between 200 and 500 degrees Fahrenheit. A single-inlet blower wheel disperses the hot air throughout the baking chamber, while solid mineral fiber insulation built into the top, back, sides, and bottom conserves energy and minimizes temperature fluctuations. Operators can adjust temperatures with the solid-state thermostat, and the control panel features an easy-to-read LED display, a cook-and-hold option, and a Pulse Plus® function to ease operation.
This two-compartment Blodgett MARK V-100 DBL convection oven accommodates (10) 18-inch by 26-inch full-size baking pans on its chrome-plated racks that can be adjusted to 11 positions spaced 15/8 inches apart. Both section's stainless steel doors open dependently to simplify pan loading and retrieval, and they feature dual-pane thermal glass windows that grant a clear view into the lighted chamber. To withstand frequent use, this 381/4-inch-wide by 401/2-inch-deep by 705/8-inch-high unit has a full angle-iron frame and stainless steel sides, front, and top. To prevent wobbling as contents are removed or inserted, it's positioned on 6-inch stainless steel legs that can be adjusted for stabilization on irregular surfaces.
