This 19¹?₈-inch-wide by 27¹?₈-inch-deep by 26¹?₈-inch-tall unit's top flange and coved-corner interior are made of 18-gauge stainless steel, while the exterior is made of durable, rust- and corrosion-resistant steel. Its 13⁷?₈-inch-wide by 21⁷?₈-inch-deep interior accommodates one 12-inch by 20-inch food pan or the fractional-size equivalent, and to comply with NSF-7 requirements, its top edge is recessed 3 inches.

To hold prechilled foods at safe serving temperatures, the Wells RCP-7100 cold pan features an air-cooled, self-contained refrigeration system with wrapped coils along its sides and base; staff can set unit temperature with the corresponding thermostat as inventory is rotated. Because it's foamed in place with CFC-free insulation, it retains generated temperatures while conserving energy in warm environments. This system includes a sight glass, service valves, a dryer/filter, a receiver, and a removable condensing unit to simplify service, and for quick cleanup between uses, it's equipped with a 1-inch drain.
