To avoid spills and to keep staff safe from burns, the Blodgett INVOQ 102BLE combi oven interior is equipped with 2 side racks with non-tilt support rails. Both the interior and exterior are constructed of stainless steel to withstand the wear and tear of consistent use. With its 8-rack capacity, the oven cavity can hold up to (10) 18-inch by 26-inch full size sheet pans or (20) 12-inch by 20-inch hotel pans. The interior corners are rounded to facilitate sufficient airflow and ensure even cooking. To provide a clear view of the cooking process, the cabinet is illuminated with LED lights. A two-step safety handle is fixed to the triple-pane glass door to provide a comfortable grip during use.

For enhanced performance, the Blodgett INVOQ 102BLE single full-size combi oven is equipped with a reversible fan which has 9 programmable settings that range from 20 to 100 percent. For precise cooking programs, the fan can be manually set in convection, steaming, and combi mode. This combi oven has a steam function with a boilerless design. To quickly program specific recipes and cooking modes, this unit is equipped with 7-inch touchscreen with controls and an intelligent interface that offers various cooking features.
