Designed with the ability to produce food products in a variety of ways, the Blodgett INVOQ 61BE full-size combi oven can operate as a convection oven, has a steaming function for preparing rice or vegetables, a proofing mode for making bakery items, and a Cook and Hold function for preserving large amounts of food product. The oven interior is made of stainless steel, is equipped with rounded corners to facilitate proper airflow, and can hold up to (7) 12-inch by 20-inch hotel pans or (5) 18-inch by 26-inch full-size sheet pans. The interior is also equipped with two side racks with fixed, non-tilt rails to prepare large batches of food items.

The Blodgett INVOQ 61BE combi oven interior has one ventilated, triple-pane glass door that works with the LED interior lighting to provide a clear view inside. This unit has an external cord probe, a USB port, a side-mounted hand shower, and sits atop four 5-inch legs with adjustable feet. Operators can program precise cooking modes and store up to 1,500 recipes with the intuitive touchscreen controls. This unit has an automatic power failure restart and a rapid cool-down function to quickly lower the oven temperature if needed.
