This roll-in, single-cavity unit holds one universal angle rack with a capacity for 32 pans measuring 13 inches by 26 inches and up to 150 pounds of food. The oven operates at 8 kilowatts, reaching a maximum temperature of 350 degrees Fahrenheit, and offers flexibility with moist heat, dry heat, or a combination of both. A power boosting switch provides control over airflow, while the automatic water fill system with a low water indicator ensures consistent humidity, shutting off the heater when water is critically low. Its non-venting design allows for simple installation without the need for external ventilation.

The Cres Cor RR-1332W-DE cook and hold oven is constructed of stainless steel with smooth interior coved corners for easy cleaning and prevention of food buildup. The solid door includes high-temperature ceramic magnetic latches and a silicone gasket for a proper seal, while antimicrobial latches reduce the risk of germ transmission. The AquaTemp system continuously monitors and adjusts both temperature and humidity to maintain food texture, prioritizing air temperature for food safety.
