For high-volume applications, the Cres Cor H-137-WSUA-12D-15A humidity hot cabinet's 12 sets of stainless steel wire universal angle slides accommodate variously sized food pans. These slides can be raised or lowered on 1¹/₂-inch centers, and they're removable for cleaning. The cabinet's top-mounted heater assembly and AquaTemp® system work in tandem to create balanced heat and humidity, ensuring prepared dishes are warm for serving while preventing them from becoming dry. Operators can use the holding thermostat's solid-state digital display control to adjust temperatures as high as 200 degrees Fahrenheit; its digital thermometer displays an accurate temperature readout to ensure meals are held safely. By using the humidity thermostat, users can modify cabinet humidity to a maximum of 95 percent. Its 4-gallon heated stainless steel water pan creates the humidity necessary to preserve food textures, and to keep the cabinet's front area dry, an integral drip trough collects the pan's leaks.

To preserve heat, the Cres Cor H-137-WSUA-12D-15A mobile heated cabinet's interior is insulated by fiberglass. Rather than opening simultaneously, its two Dutch doors open independently, enabling users to access specific cabinet sections to reduce heat loss. These doors are simple to open with their high-temperature ceramic magnetic latches, and they're treated with an antimicrobial protection agent that slows bacterial spread between regular cleanings. Silicone door gaskets ensure the doors seal properly; twist-lock catches keep them closed during transport. This 28¹/₄-inch-wide by 32⁹/₁₆-inch-deep by 73-inch-high unit's stainless steel construction includes a structurally rigid internal frame to support as much as 1,000 pounds and withstand repeated transport. Furnished with four 5-inch swivel casters, this full-height unit can round corners and reverse, and because two casters include brakes, it can remain in place during use.
