Built for compact kitchens, the Cres Cor H-137-WSUA-5D undercounter hot cabinet measures 281/4 inches wide by 333/8 inches deep by 313/4 inches high. Its rust-, corrosion-, and wear-resistant stainless steel exterior features a structurally rigid internal frame and reinforced base that provide strength to support as much as 600 pounds and withstand collisions during transport. Its field-reversible door can be opened quickly with its antimicrobial ceramic magnetic latch; as the cabinet is moved, its twist-lock catch ensures it remains closed. For smooth maneuvering, this system is furnished with 21/2-inch swivel casters, and two casters have brakes. Inside the coved cabinet, five sets of stainless steel wire universal angles accommodate variously sized pans and can be adjusted on 11/2-inch centers.
This Cres Cor H-137-WSUA-5D insulated hot cabinet uses a powerful, top-mounted heater and an AquaTemp® system to generate the heat and humidity that meals need to remain at safe holding temperatures without becoming dry. Users can adjust the heater's temperatures as high as 200 degrees Fahrenheit via the holding thermostat's solid-state digital display control, which shows an accurate temperature on its digital thermometer. Humidity can be manipulated to a maximum of 95 percent with the humidity thermostat, which activates the 4-gallon heated water pan. When water levels drop, an LED indicator light notifies the operator; the water heater shuts off automatically when water levels are low. To preserve programmed heat and humidity, 2-inch fiberglass insulation is built into the sides, while 11/2-inch fiberglass insulates the door, base, and top.
