The Metro C515-CFC-U half-height heated cabinet is designed for heating and proofing, holding cooked food at safe temperatures and ensuring breads are properly proofed before baking. Adjustable between 80 and 190 degrees Fahrenheit, the unit is versatile, and the humidity can be adjusted for more flexibility. Controls on the bottom have a recessed design to protect the dials from damage, and the panel is removable for maintenance.

The universal wire slides in this Metro C515-CFC-U mobile heated cabinet are spaced in 3 inches apart and adjustable in ¹/₂-inch increments. It can hold eight full-size sheet pans or 16 full-size, 2¹/₂-inch-deep hotel pans. Because the cabinet is not insulated, it doesn't work well with long-term holding applications and is better suited for short proofing and heating operations. Field reversible, the door opens 180 degrees for convenient pan loading and unloading.
