To support high-volume applications, the Metro C553-MFC-L C5? 3 Series undercounter insulated heated holding and proofing cabinet holds (10) 18-inch by 26-inch pans via its lip-load slides secured on 1.5-inch centers. Users can adjust the thermostat between 80 and 200 degrees Fahrenheit to accommodate various product needs, and a forced convection system circulates air throughout the cabinet evenly for best results. At lower temperatures, the unit controls moisture for proper proofing. Insulation Armour? technology retains internal temperatures while keeping the exterior cool to prevent user injury.

This Metro C553-MFC-L heated holding and proofing cabinet's exterior is made of polymer, which resists dents, impacts, and stains to endure long-term use. It features a red material that can provide an accent color to kitchen equipment or indicate its use in color-coded applications to prevent cross contamination. The bottom-mounted controls include recessed control dials, a digital thermostat, a power indicator, and a master on/off switch, and they're removable for maintenance and cleaning. This 27⁵/₈-inch-wide by 31¹/₂-inch-deep by 32-inch-high structure is furnished with 3-inch casters for smooth maneuverability and stabilization. To save on kitchen space, it's intended to be installed beneath a counter.
