The Metro C539-CDC-U full-height heated cabinet holds as many as (18) 18-inch-by-26-inch pans or (34) 12-inch-by-20-inch-by-2¹/₂-inch pans. It has the ability to hold product at serving temperatures and proof dough. With its proofing mode, the cabinet has moisture control at low temperatures. The unit operates from 80 to 200 degrees Fahrenheit, and at 95 degrees Fahrenheit, it has 95-percent relative humidity.

Insulation Armour? technology makes this unit durable with high-density insulation and durable polymer. Controlling the settings on this Metro C539-CDC-U heated holding and proofing cabinet is simple on a control panel with an on/off switch, power-indicator lights, and dial knobs. It also has a clearly visible digital thermometer. To simplify the cleaning process, the panel is removable without tools, and when upgrades are available, the panel can be taken out and replaced by a newer model. It has double-hinged doors, and to fit into different layouts, they are field reversible.
