This ³?₄-height Metro C587-SFC-L C5? 8 series controlled temperature holding cabinet's lip-load slides accommodate as many as (27) 18-inch by 26-inch sheet pans, which can be adjusted in 1¹/₂-inch increments. Its reach-in configuration grants access to the cabinet's front to simplify pan loading and retrieval, and because the door has a clear tempered glass construction, operators can check inventory quickly without releasing heat. This 29¹/₈-inch-wide by 32⁵/₈-inch-deep by 62³/₄-inch-high unit is made of corrosion- and rust-resistant stainless steel and furnished with 5-inch casters.

To ensure prepared food is held at the correct temperatures, the Metro C587-SFC-L holding cabinet's solid-state controller operates with a continuous closed-loop monitoring system. A digital temperature readout is built into the top of the unit alongside a low-temperature alarm and a memory and recall button. The ducted heating system circulates hot air between 70 and 200 degrees Fahrenheit through the cabinet and recovers the cabinet's programmed temperatures after sudden drops or spikes. To prevent product from drying out, users can implement a water pan system, which adds passive humidity to the cabinet.
