The Metro C5E9-CFC-U C5? E Series heated holding cabinet can be used for holding or proofing, and it has a single electromechanical dial with color-coded sections for each mode. Next to the dial is an analog thermometer where users can check the interior temperature level. Stored food can be seen through the polycarbonate door, reducing the amount of time spent with the door open. To trap heat in, a door gasket eliminates cracks around the door frame.

Equipped with universal slides, this Metro C5E9-CFC-U holding and proofing cabinet can hold either full-size food pans or full-size sheet pans. It uses forced convection to circulate heat throughout the cabinet and warm all foods evenly. For mobility, the door magnetically latches shut, and the cabinet rolls on four swivel casters. The aluminum construction ensures the unit is lightweight and can be maneuvered with ease.
