The Vulcan C24EO3 three-pan convection steamer provides operators with economical, quick means to cook food, and during the cook cycle, its stainless steel cooking compartment can be opened at any time to season, rotate pans, stir product, or check cooking progress. Because this unit uses forced convection, turbulence reduces the insulating barrier of condensation on product. Its continuous venting system eliminates virtually all air from the compartment as steam expands and fills it, bringing about gentle, fast cooking. So it does not need a water or drain connection, this unit has a built-in steam generator. When water in the generator gets low, the unit alerts users with a light and audible alarm.
