Each pot holds as much as 30 pounds of oil, and its temperature is controlled with a center-mounted RTD, which has a 1-degree-Fahrenheit action thermostat for temperature precision. Users can also monitor oil quality and life with the 3000 controller's management technology. This controller also includes 20 programmable cook buttons, and it automatically adjusts cook times for different loads. For energy efficiency, the pots are heated with swing-up, self-standing flat-bar heating elements, and when the fryer isn't in use, a COOL mode lowers temperature to save energy.

To ensure the oil's quality is preserved, this Frymaster FPEL214CA floor fryer includes a built-in filtration system in the fryer battery. It has a two-lever structure with recessed handles inside its cabinet that helps prevent accidental filtration. Both of the frypots have an easy-to-clean open design, and oil automatically refills with the Oil Attendant® mechanism, which moves oil from the jug-in-box inside the fryer cabinet to reduce hands-on user maintenance.
