Designed to produce 84 pounds of french fries per hour, the Frymaster FPRE380-21 high-production fryer is equipped with three frypotsa€”each of which has an 80-pound oil capacity. To accommodate large, breaded items, such as bone-in chicken, the frying area measures 18 inches wide by 18 inches deep. Self-standing, swing-up, flat-bar heating elements warm the oil evenly and are engineered to last. To preserve oil quality throughout operation, a temperature sensor mounted onto each heating element enables operators to manage oil temperature and minimize the risk of heat damage. Two twin baskets, a screen-type basket support, and a hanger are included to streamline the frying process.
At the bottom of the Frymaster FPRE380-21 electric fryer's frypots, a large, forward-sloping cold zone collects sediment, and a 1 1/2-inch full-port drain valve expels buildup. To minimize oil waste, reduce how often operators interact with hot oil, and boost the number of filtering cycles, a filtration system is built beneath the two far-right fryers. Its rear flush mechanism relocates sediment to the front drain valve for smooth expulsion. This unit also features a boil-out mode that removes old oil, and a melt cycle liquifies new blocks of shortening. To withstand high-volume, daily use in commercial kitchens, its frypots, door, and cabinet sides are made of durable stainless steel.
