For monitoring purposes, the Frymaster FPRE480-21 electric fryer's controls read a temperature constantly. It's equipped with an automatic melt cycle, boil-out temperature controls, and a digital timer that counts down until product is finished cooking. A 1-degree compensating temperature probe corrects the levels in case unwanted fluctuations occur. The unit is made of stainless steel, offering durability and rust resistance.
The Frymaster FPRE480-21 commercial fryer can be used to cook french fries and chicken wings in four 80-pound-capacity vats and eight twin baskets. To prevent them from falling in, the baskets are secured with screen-type supports, and hangers offer a place for them to sit while hot oil is drained after removal. The bottom of the unit's interior slopes forward to lead sediment into a large cold zone, which is fitted with a full-port drain valve to facilitate cleaning after use.
