Its 72-inch-wide by 24-inch-deep griddle plate structure provides ample room for several foods, and its heating mechanism is designed to individually control 12-inch sections of the griddle. Because of the six separate snap-action thermostatic controls, users can determine the best temperature for certain portions of the griddle for optimal cooking results. Equipped with a temperature range between 200 and 450 degrees Fahrenheit, this unit enables users to reheat, grill, and thoroughly cook a wide variety of foods. Incoloy elements heat the surface, and the 3/4-inch-thick steel plate quickly heats. The plate is thicker than other griddle plates, so it has a reduced risk of warping over time from constant reheating.

The Vulcan HEG72E heavy-duty commercial griddle is made of durable stainless steel and has four legs that can be adjusted as needed for improved airflow and cleaning. Its smooth exterior is quick to clean, and grease is collected in two 1.5-gallon grease drawers for easy removal. Splash guards line the griddle's rear and sides to prevent hot oil from spilling on the counter or the user.
