Operators can adjust the temperature of the Alto-Shaam 20-20W holding cabinet from 60 to 200 degrees Fahrenheit using intuitive touch controls, and it operates with a Halo Heat® system that gently surrounds food to maintain its moisture, flavor, and overall quality for extended holding times. Its single door offers access to the interior, which can accommodate (40) 12-inch by 20-inch pans or (10) 18-inch by 26-inch pans.
