The BevLes HPIC-6836 full-size heated proofing cabinet measures 22⁷/₈ inches wide by 33¹/₄ inches deep by 67⁵/₈ inches high and accommodates (36) 18-inch by 26-inch pans. Constructed of anodized aluminum, this cabinet is resilient and corrosion resistant, and it includes corner bumpers to protect it from collision damage during transport. The unit?s Lexan door is clear to promote interior visibility without letting heat escape.

The BevLes HPIC-6836 heated proofing cabinet features heating and proofing modes, which are set and managed using the dial controls. The heating mode enables temperature adjustments up to 180 degrees Fahrenheit, while the proofing mode maintains temperatures as high as 115 degrees Fahrenheit and humidity between 30 and 95 percent. The unit?s holding temperature is displayed on an LED thermometer, and these temperatures are distributed throughout the cabinet with forced-air circulation and an air baffle.
