The full-size BevLes HPC-7125-A heated proofing cabinet is constructed of anodized aluminum for optimal heat absorption and transfer, and this unit can hold (27) 18-inch by 26-inch pans. For simple interior accessibility, the cabinet is fitted with one clear Lexan door that works to lock in high temperatures and humidity. This door is field reversible, which requires a left-hand hinge set, and the unit is designed with corner bumpers to prevent external damage. Overall, this unit measures 24 inches wide by 32³/₅ inches deep by 70¹³/₁₆ inches high.

Using forced-air circulation and an air baffle, the BevLes HPC-7125-A heated proofing cabinet produces consistent results and ensures even temperatures throughout the entire cabinet. This unit is managed with its bottom-mounted controls, and the control drawer can be removed for thorough cleaning. The cabinet includes two different operating modes: heating mode, which reaches temperatures as high as 180 degrees Fahrenheit, and proofing mode, which operates as high as 110 degrees Fahrenheit with 30 to 95 percent humidity.
