To ensure prepared dishes are held at safe temperatures for serving, this Cres Cor H-137-PWSUA-12D insulated hot cabinet features a powerful top-mounted heating system that produces temperatures as high as 200 degrees Fahrenheit. Fiberglass insulation built into the sides, doors, top, and base maintain temperatures as the doors are opened for pan loading and retrieval. Because foods can become dry when held at high temperatures, this cabinet includes an AquaTemp™ system, which enables users to adjust humidity as high as 95 percent to preserve foods' textures. A 4-gallon, 16-gauge stainless steel water pan holds the water required for generating humidity, and when water levels are low, the water heater shuts off automatically. Operators can modify temperatures, adjust humidity percentages, and manage timers using the solid-state digital display controls that include a power button and LED digital displays.

Specific compartment sections can be accessed using the Cres Cor H-137-PWSUA-12D hot cabinet's two front Dutch doors and two rear Dutch doors, reducing heat loss that occurs when opening the entire cabinet. While all the doors ship right hinged, they can be reversed in the field to accommodate various kitchen spaces. This single-section, pass-thru configuration can be used to connect a prep station to a serving area for streamlined operation. Inside the cabinet, 12 sets of stainless steel wire universal angles accommodate variously sized pans for versatility, and to achieve specific results, the angles can be adjusted on 1¹/₂-inch centers. Constructed of rigid, corrosion-resistant stainless steel, this unit features a reinforced internal frame and base that maintains structural integrity through high-volume use. This 28¹/₄-inch-wide by 34⁵/₈-inch-deep by 73¹/₂-inch-high cabinet is furnished with heavy-duty 5-inch swivel casters, and two of these casters include brakes for stability. Recessed handles on both sides improve steering control while protecting walls from damage during collisions.
