By combining heat and humidity, this Cres Cor H-137-WSUA-12D mobile heated cabinet ensures prepared meals are warm for serving and their original textures are preserved. Its top-mounted, 2,000-watt heater system generates and maintains temperatures as high as 200 degrees Fahrenheit, while its AquaTemp™ system circulates humidity as high as 95 percent throughout the cabinet using its 4-gallon stainless steel water pan. Separate solid-state digital display controls oversee both systems, enabling operators to create ideal holding environments for specific foods, while a digital thermometer provides an accurate temperature readout. The top, doors, sides, and base are insulated by fiberglass, ensuring dishes remain warm as they're transported from the kitchen to serving areas and vice versa. To maintain a dry area in front of the doors, an integral drip trough catches water from the water pan.

Despite being a full-height unit, the Cres Cor H-137-WSUA-12D insulated stainless steel hot cabinet is simple to maneuver with its four 5-inch swivel casters and recessed side handles. Its rust- and corrosion-resistant stainless steel construction includes a structurally rigid internal frame that withstands collisions; its Dutch doors' twist-lock catches ensure they remain in place during transport. The cabinet's coved interior is simple to wipe clean to reduce grease and food particle buildup, and 12 sets of stainless steel wire universal angles can be adjusted on 1¹/₂-inch centers as needed. For versatility, this unit can hold various pan sizes.
