Metro C517-PFC-L 3/4 Height Non-Insulated Mobile Proofing Cabinet W/ (27) Pan Capacity, 120v

The Metro C517-PFC-L ³/₄-height non-insulated mobile proofing cabinet can hold 27 full-size sheet pans inside its cavity, supported on extruded aluminum lip-load slides. Its polycarbonate door is clear, enabling operators to check the status of food inside the cabinet without opening the door to release heat and moisture. Individual analog controls give users the ability to adjust temperature and humidity settings independently and precisely, while a digital display makes it straightforward to monitor the settings.

Because the Metro C517-PFC-L ³/₄-height proofing cabinet isn't insulated, it's ideal for short-term mobile applications. It's mounted on 5-inch casters to provide smooth movement; two casters can brake. The reversible polycarbonate door is clear and opens as far as 180 degrees for unobstructed access to the cabinet's interior. To conserve energy and prevent moisture from leaking, the unit is designed with magnetic latches and a Santoprene door gasket.
