The thermostat can be adjusted between 80 and 200 degrees Fahrenheit, maintaining warm temperatures prior to serving and establishing an ideal environment for rising dough. For optimal performance, the cabinet heats up and recovers temperatures quickly, and operators can control moisture at lower temperatures. A digital thermostat provides a readout that users can read swiftly, while the recessed control dials limit accidental adjustments. These bottom-mounted controls are removable for cleaning, maintenance, and upgrades.

The Metro C533-MFC-U-GY holding and proofing cabinet's interior has universal slides secured on 3-inch centers that can be adjusted in 1¹/₂-inch increments to accommodate various product sizes.
