Its 27⁵/₈-inch-wide by 31¹/₂-inch-deep by 32-inch-high structure can be installed beneath a counter and is furnished with 3-inch casters for mobility and stability. The cabinet's aluminum interior is lined with lip-load slides secured on 1¹/₂-inch centers and has a capacity of (10) 18-inch by 26-inch pans. The fully insulated polycarbonate door swings out for quick product loading and retrieval, and users can check inventory through its clear window.

The Metro C533-MFS-L heated holding and proofing cabinet's thermostat can be adjusted between 80 and 200 degrees Fahrenheit, and the unit's forced convection system heats up and recovers heat quickly. At lower temperatures, it uses moisture heating—ideal for rising dough. Operators can track temperatures with the digital thermometer, and recessed control dials help reduce the risk of accidental adjustments. To support quick cleaning and maintenance, all controls are removable and mounted on the bottom of the unit.
