It's four 5-inch casters enable smooth mobility, and two casters include brakes for stabilization as pans are loaded and retrieved. Its polymer exterior resists dents, stains, and impacts, while vertical hand holds are molded into its four sides to improve steering control. Inside the cabinet, fixed wire slides welded 3 inches apart support eight 18-inch by 26-inch sheet pans or (16) 12-inch by 20-inch by 2¹/₂-inch steam pans.

Compatible with holding and proofing applications, this Metro C535-CFS-4 insulated mobile heated holding cabinet is a combination model that generates temperatures from 80 to 200 degrees Fahrenheit and produces 95 percent humidity when internal temperatures are 95 degrees Fahrenheit. Its forced convection technology heats and recovers temperature changes quickly to prevent operational lags. Operators can modify heating and humidity with the removable, bottom-mounted control panel that features a digital thermometer, recessed control dials, a power switch, and power indicator lights. To minimize temperature fluctuations, a solid, insulated full-length door encases the cabinet, and Insulation Armour? high-density polyethylene retains heat and saves energy while keeping the exterior cool.
