Depending on the size of the pans, the Metro C539-CDC-U full-height, insulated heated cabinet can hold 17 or 32 pans. Fixed wire shelving with 3-inch spacing is included to hold the pans. The unit's combination mode has settings for hot holding and proofing. In the proofing mode, operators can control moisture at low temperatures. The thermostatically controlled, forced-convection system heats up and recovers temperatures quickly.

On the Metro C539-CDC-U heated holding and proofing cabinet's control panel, there is an on/off switch, power indicator lights, dial knobs, and a digital thermometer. This panel can be removed without tools, enabling the operator to replace it when there are upgrades. Its full-length door has a polycarbonate window that gives staff members a view of product. Durable for high-volume uses, this unit has Insulation Armour? with polyethylene insulation and a polymer construction.
