The Metro C539-MFC-U full-height heated cabinet keeps food warm until it's time to be served. It can be rolled through a serving hall on its 5-inch casters, two of which have brakes to hold it still as the cabinet is loaded and unloaded. This unit heats exclusively with humidity. The temperature can be adjusted via thermostatic controls; the unit reaches levels as high as 200 degrees Fahrenheit.

To monitor its temperature, the Metro C539-MFC-U mobile heated cabinet has a digital thermometer. Its door and cabinet are insulated, and it has red Insulation Armour? that holds in warm air, so food doesn't get cold. Accommodating (18) 18-inch by 26-inch or (34) 12-inch by 20-inch food pans, this unit's universal slides are adjustable in 1¹/₂-inch increments.
