To withstand high-volume applications, the Metro C569-SDS-UPDS C5? 6 series heated holding cabinet's exterior is made of polished, 20-gauge stainless steel, while the interior is made of 22-gauge stainless steel. Four solid Dutch doors built into the front and back of this pass-thru unit enable operators to access the top or bottom to minimize temperature fluctuations. Universal wire slides inside the cabinet accommodate (32) 12-inch by 20-inch by 2¹/₂-inch steam pans or (17) 18-inch by 26-inch sheet pans and can be raised or lowered by 1¹/₂ inches. Great for catering applications, this full-height cabinet is furnished with casters for smooth maneuvering.

The Metro C569-SDS-UPDS heating holding cabinet's ducted system heats the cabinet interior and recovers lost temperatures rapidly to accommodate consecutive holding applications. Operators can use the top-mounted temperature controls to adjust temperatures between 70 and 200 degrees Fahrenheit, and its analog thermometer provides a constant temperature reading, even when the unit is unplugged. High-density fiberglass insulation lines the unit's perimeter to preserve temperatures when doors are opened for short periods of time or when the unit is stored in cool ambient environments. To retain the original food's texture, its integral water pan system introduces passive humidity.
