Metro C589-SDC-U Full Height Insulated Mobile Heated Cabinet W/ (17) Pan Capacity, 120v

The Metro C589-SDC-U C5? 8 series controlled-temperature holding cabinet features a reach-in configuration that provides direct access to the front of the unit to simplify pan loading and removal. Dutch double-pane tempered glass doors built into the front of the unit enable operators to see into the cabinet without opening the door, and this door design also grants access to a particular part of the cabinet without opening the entire door. To accommodate high-volume holding applications, its universal wire slides hold (17) 18-inch by 26-inch sheet pans or (32) 12-inch by 20-inch by 2.50-inch steam pans, and the slides can be adjusted by 1.50 inches. Designed to be moved, this full-height cabinet is mounted on 5-inch casters—two of which have brakes.

A digitally controlled ducted heating system generates and maintains temperatures between 70 and 200 degrees Fahrenheit inside the Metro C589-SDC-U holding cabinet. To ensure product is held in a safe environment, the solid-state controller uses the continuous, closed-loop monitoring system for an accurate temperature readout, and an alarm will sound if temperature changes unexpectedly. High-density fiberglass insulates the perimeter to minimize the risk of temperature fluctuations, even if the cabinet is stored in cold ambient temperatures. Operators can adjust temperatures as needed with the top-mounted temperature controls, while an integral water pan system introduces passive humidity, which can preserve foods' original texture.
