To simplify mobility, the Metro C595-SFS-UPFC holding and proofing cabinet is mounted on 5-inch casters and features a non-marking polymer bumper that doubles as a drip trough. It's a half-height, pass-thru model featuring one glass door and one solid door, and because it's constructed of 304 stainless steel, this unit is durable, easy to clean, and rust and corrosion resistant. Its universal wire slides can accommodate eight 18-inch by 26-inch sheet pans or (16) 12-inch by 20-inch by 2¹/₂-inch pans.

The Metro C595-SFS-UPFC heated cabinet is insulated with high-density fiberglass to preserve heat and extend holding times, and it has a temperature range of 90 to 200 degrees Fahrenheit. Operators can make adjustments with intuitive touchscreen controls that include an auto-start feature to power the cabinet on and alarms for low-temperature and low-water levels. To prevent unauthorized modifications, it features a password-protected control lock, and overall, this unit measures 30 inches wide by 36³/₈ inches deep by 44³/₄ inches high.
