The Metro C599-SFS-U C5? 9 series heated holding and proofing cabinet's universal wire slides support (18) 18-inch by 26-inch sheet pans or (34) 12-inch by 20-inch by 2¹/₂-inch steam pans?ideal for high-volume extended holding. Operators can adjust heat from 90 to 200 degrees Fahrenheit to accommodate a wide range of prepared foods, and moisture can be adjusted to various levels depending on set cabinet temperatures. Because these heat and humidity generation systems use ducted airflow, heat and moisture move evenly throughout the cabinet to maintain consistent temperature and humidity levels. For simple operation, a top-mounted touchscreen control includes separate heat and moisture controls, and users can program recipes and timers.

Operators can access stored pans directly by opening the Metro C599-SFS-U mobile heated cabinet's insulated solid door. This fully insulated door and the fiberglass-insulated interior preserve original temperatures when the unit is transported or stored in cool environments.
