The dual-function Moffat P10M Turbofan? proofing and holding cabinet generates moisture and heat to activate yeast so dough can rise properly. Its control panel features a straightforward mode-selector switch with off, proof, and hold options to initiate humidity production or heating. To accommodate specific proofing and holding requirements as inventory changes, operators can adjust humidity levels and use the mechanical thermostat to modify cabinet heat between 65 and 185 degrees Fahrenheit. For even results, its low-velocity circulation fan system distributes moist air and heat throughout the cabinet. To eliminate manual refilling, its water reservoir refills automatically.

This compact Moffat P10M proofing and holding cabinet measures 24 inches wide by 26³/₄ inches deep by 40 inches high and can be installed with a Turbofan E33D convection oven. Its interior trays accommodate (10) 12-inch by 20-inch steam pans or 10 half-size sheet pans—ideal for medium-volume proofing applications. Operators can monitor proofing through the side-hinged glass door, which grants a full view into the illuminated cabinet. To withstand heavy-duty use, its stainless steel construction resists wear, corrosion, and rust, and it's simple to wipe clean between uses. For smooth mobility when cleaning or maintenance is required, this cabinet is mounted on 3-inch casters—two of which are rigid, while two swivel and lock.
