These components are removable, and an insulated lid pulls down to protect them. In front of this arrangement is an 8-inch-deep, full-length nylon cutting board to streamline recipe assembly.

To ensure safe and efficient operation, the Continental D48N18M-D refrigerated preparation table's self-contained refrigeration system uses R290 refrigerant. This system is positioned behind the rear panel that's easily removable as needed. It's equipped with a hot-gas condensate evaporator and off-cycle defrost to reduce required staff intervention. To set the desired holding temperature from 33 to 41 degrees, staff must access the electronic controller.
