Made of durable stainless steel, the Continental D72N18-FB Designer Line sandwich/salad prep table promotes longevity, while the 12-inch nylon cutting board is easy to clean and resists stains. Two compartments line the top of the unit for easy access to frequently used ingredients, and these compartments hold 18 sixth-size recessed pans. Measuring 20.6 cubic feet, the interior is fitted with three epoxy-coated steel shelves and is accessible behind the three solid, self-closing doors. With a field-reversible design, these doors support versatile placement. This unit measures 72 inches wide by 32³/₁₆ inches deep by 41 inches high overall and is positioned on four 3³/₄-inch casters for mobility.

The Continental D72N18-FB prep table's self-contained refrigeration system is located on the back of the unit, which is exposed to more air circulation, and contains a hot gas condensate evaporator and off-cycle defrost for reduced water and ice formation. For quick and accurate temperature adjustments, this unit is controlled electronically, and staff can set the holding temperature between 33 and 41 degrees Fahrenheit. If the temperature deviates from its setting, an alarm sounds until the problem is resolved. This prep table utilizes R-290 hydrocarbon refrigerant for efficient cooling and is insulated with 2 inches of polyurethane foam for energy conservation.
