The 10-inch-deep, full-length nylon cutting board provides ample prep space, and the integrated arrangement of 18 sixth-size pans streamlines ingredient organization. Designed with operator efficiency in mind, the unit includes four roll-out drawers, polished chrome handles, and magnetic snap-in Santoprene™ gaskets for a tight seal.

For precise temperature control, the Continental RA68N18M-D refrigerated preparation cabinet features a side-mounted, self-contained refrigeration system accessible via a small door above the compressor. This forced-air system cools efficiently using an expansion valve system and environmentally safe R290 refrigerant. An automatic hot gas condensate evaporator reduces maintenance requirements, while the corrosion-resistant, plasticized fin evaporator coil enhances longevity.
