Its 32-cubic-foot interior accommodates 30 sixth-size pans covered by two insulated lids, while the 10-inch-deep, full-length nylon cutting board provides ample space for ingredient assembly. Built with a 300-gauge stainless steel worktop, stainless steel front and end panels, and galvanized steel rear and grill panels, this unit offers exceptional durability and resistance to corrosion. Accessibility is enhanced by three full-height solid doors and one half-height access door, simplifying ingredient retrieval and organization.

The Continental RA93N30M refrigerated preparation unit is equipped with a side-mounted, self-contained refrigeration system that utilizes R290 hydrocarbon refrigerant for eco-friendly and efficient cooling. Forced-air cooling and an expansion valve ensure consistent temperature regulation, while the system's automatic hot-gas condensate evaporator and corrosion-resistant plasticized fin evaporator coil reduce maintenance needs. An internal electronic controller, accessible via the small access door, provides precise temperature adjustments. Santoprene™ magnetic gaskets ensure a tight seal, and six 5-inch casters, including front-locking options, enable mobility and stability.
