The strong and durable Hoshizaki SR72B-30M mega top sandwich table is primarily made of corrosion-resistant stainless steel which extends to its interior and exterior front, sides, and covers. This resilient fridge and its inner workings are built to withstand frequent use. With a self-contained, rear-mounted refrigeration system, this reach-in is paired with an epoxy-coated evaporator which facilitates hot gas condensate removal and time-initiated defrosts that aim to preserve its functionality. A system of capillary tubing spans the body, forcing out hot air with environmentally friendly R290 hydrocarbon refrigerant. This refrigeration unit is finished with an air distribution system that fans cool air from the storage cavity to the pan housing. The four 6-inch casters aid with unit movement when it must be cleaned or relocated.

The design of the Hoshizaki SR72B-30M food prep table's upper half protects the 30 sixth-size, topping-filled pans from external contaminants while maintaining temperatures between 32 and 52 degrees Fahrenheit. Adapter bars suspend these 4-inch-deep pans above the cold liner, while the top rail has a slightly larger depth of 6 inches for higher volume ingredients. A 72-inch cutting board below this area catches food crumbs and provides a clean surface upon which to make stuffed hoagies or mixed green salads. For additional space, this workstation is paired with a three-section storage cavity sealed with stainless steel doors and removable, magnetic gaskets. Line cooks can prop these doors open at 90 degrees to utilize the stay-open feature when gathering additional supplies and ingredients. These doors shut automatically for user convenience when opened to lesser angles. Each section is paired with an adjustable shelf to optimize the layout and the unit itself is attached to four casters for simplified movement.
