Each shelf measures 20⁷/₈ inches wide by 25⁵/₈ inches deep and accommodates 18-inch by 26-inch sheet pans. Four solid, field-reversible doors enclose the base, and if these doors are opened past 95 degrees, they remain open so staff can load and retrieve products without needing to reopen the door. To deter tampering, these doors can be locked. The unit's stainless steel salad top accommodates 16 third-size polycarbonate food pans and features three insulated lids that protect foods from contamination. Users can chop and slice produce on the included polyethylene cutting board, which can be removed during cleaning.

The Infrico IRT-MR119EN prep table's base uses environmentally friendly R290 hydrocarbon refrigerant to produce and maintain temperatures between 35 and 41 degrees Fahrenheit so ingredients remain fresh. Operators can adjust temperatures and initiate an automatic defrost cycle with the digital control panel. This forced-air refrigeration system features a self-contained, side-mounted compressor and a corrosion-resistant polyester evaporator coil. To minimize the risk of temperature fluctuations, the cabinet is insulated with foamed-in-place, high-density polyurethane.

For heavy-duty use, this pizza prep table's stainless steel construction resists rust, corrosion, warps, and dents and can simply be wiped clean as needed. Inside the cabinet, the sealed interior floor and rounded corners enable thorough cleaning, while the built-in drain expels residue. This unit measures 119¹/₄ inches wide by 32⁵/₈ inches deep by 40³/₈ inches high and is positioned on 4-inch casters for smooth mobility.
