The 31/2-inch-long blade on this Dexter Russell S360-312P-PCP 360® paring knife is the ideal size for peeling, cutting, slicing, dicing, and trimming produce. It has a straight edge and spear-point tip that can pierce through thick skins, rinds, and crusts. Made of DEXSTEEL® high-carbon steel, the blade is durable and resists rusting. Its polypropylene and Santoprene® handle offers a comfortable, slip-resistant grip. The handle is contoured to fit in the hand and has an integrated finger guard for protection from the sharp blade. Because the handle is purple and black, it can be used in allergen-free prepping systems.
