Its fixed wire slides are mounted on 3-inch centers, enabling it to fit food pans as deep as 3 inches. To help users monitor dough as it proofs, the cabinet's door is made of clear polycarbonate, and its high-strength magnetic latches secure the door closed to prevent air from escaping during the proofing process.

Users can adjust the heat and humidity settings of the Metro C515-PFC-4 half-height uninsulated mobile proofing cabinet using the recessed analog controls and monitor the changes via the digital display. To support future upgrades and repairs, the unit's control module is removable, and it's bottom mounted to avoid overheating.
