Removable without tools, the Metro C515-PFC-L C5? 1 Series half-height non-insulated mobile proofing cabinet's control module provides a digital temperature display that facilitates accurate monitoring of the unit's proofing status. Its forced-air heating system is thermostatically controlled to maintain temperature settings during periods when the door must be opened and closed often. Designed for mobile applications, this unit is mounted on 5-inch neoprene casters and built with a lightweight aluminum body to streamline movement from one area to another. Because it's not insulated, this cabinet doesn't maintain heat for extended periods after being unplugged, so it's best suited for short-term use.

The Metro C515-PFC-L half-height uninsulated mobile proofing cabinet provides fixed lip-load slides made of extruded aluminum, enabling the unit to support as many as (17) 18-inch by 26-inch pans of food at one time. For streamlined cleaning, the cabinet contains a smooth polymer drip trough and catch pan to contain leaks and spills during use. Using a lever-action release, the door's high-strength polymer latches include magnetic function to provide a firm closure. This unit's thermostat can be set from 80 to 120 degrees Fahrenheit, suiting it for locations that need to proof a large volume of dough for pizza crusts, croissants, or pastries.
