Metro C519-PFC-4 Full Height Non-Insulated Mobile Proofing Cabinet w/ (18) Pan Capacity, 120v

The Metro C519-PFC-4 C5? 1 Series full-height heated cabinet is constructed of aluminum for strength and corrosion resistance. To maintain its shape, the doorframe is made of powder-coated aluminum. A clear polycarbonate door provides means for the operator to monitor product without releasing heat. This unit accepts (18) 18-inch by 26-inch pans or (34) 12-inch by 20-inch by 2¹/₂-inch pans, which can sit on fixed wire slides, each welded 3 inches apart. With its 5-inch casters, this cabinet is simple to transport.

A forced-air heating system keeps temperatures between 80 and 120 degrees Fahrenheit while humidity maintains food moisture. Humidity and temperature are controlled separately with analog knobs; a digital display shows the actual temperature and humidity level in the Metro C519-PFC-4 non-insulated heated cabinet. The control panel includes indicator lights and a master on/off switch.
