Its simple-to-navigate control panel includes a mode-selector switch with off, proof, and hold options. Its humidity system includes an auto water-fill system that eliminates manual refilling tasks, while its heating mechanism features a mechanical thermostat that can be adjusted from 65 to 185 degrees Fahrenheit. For uniform heat and moist air distribution, a low-velocity circulation fan system moves heat and humidity throughout the cabinet. A cabinet temperature thermometer displays an accurate readout so users can monitor internal temperatures.

This Moffat P85M8 mobile proofer cabinet measures 35⁷?₈ inches wide by 34⁵?₈ inches deep by 36 inches high?compact enough for installation with Turbofan E35D or E35T convection ovens. Made of rigid, rust- and corrosion-resistant stainless steel, it withstands heavy use, and it's furnished with 3-inch-diameter casters for smooth mobility when cleaning or servicing is required. Its trays accommodate 8 full-size sheet pans or 16 half-size sheet pans and are spaced 3 inches apart. The left-hinged door features a glass panel that provides a full view into the halogen-lighted cabinet so users can monitor progress, and its continuous seal prevents heat seepage.
