This rust- and corrosion-resistant stainless steel unit is furnished with 3-inch casters?two of which are rigid while two can swivel and brake?for smooth mobility between the kitchen and serving area. Its 18¹?₄-inch-wide by 27¹?₂-inch-deep by 28³?₄-inch-high interior accommodates eight full-size pans or 16 half-size pans, and the left-hinged door features a glass panel that provides a direct view into the cabinet so users can monitor dough rising.

The Moffat P8M half-height proofer and holding cabinet uses humidity and heating systems to create a sufficient environment for dough, parbaked goods, or preproofed items. Operators use the mode-selector switch to initiate proofing or holding and turn off the cabinet. Its humidity system includes an auto water-fill mechanism and a humidity level control, while its heating system includes a mechanical thermostat with a 65-to-185-degree-Fahrenheit temperature range and an accurate temperature display. To eliminate dry and cold spots, its low-velocity circulation fan system moves moisture and heat throughout the cabinet evenly.
