The Vulcan VE40 tilting skillet has a 40-gallon capacity for braising, boiling, sautA©ing, frying and simmering foods. The braising pan has a nonstick finish and coved corners to prevent food and bacteria from accumulating. Gallon and liter markings are embossed on the body so users can measure contents accurately. The stainless steel-clad cooking surface is attached to a steel sub plate that uses rapid heating technology and embedded elements to provide even surface heat. For safety, the heating elements will turn off when the pan is lifted higher than 5 degrees. The pan sits on top of a stainless steel, partially-enclosed base with removable side panels to provide access to the internal components.
The Vulcan VE40 electric braising pan has a formed lip with a perforated strainer to pour liquids without losing solids. A drop-away pan support is mounted under the lip, providing space to store product before or after cooking. The anti-jam, pan-lifting mechanism comes with a removable handle for cranking, and the pan will tilt to empty after 30 cranks. The solid-state temperature controls are housed within a water-resistant enclosure and feature push buttons for operation. The thermostat is adjustable and has a temperature range of 50 to 425 degrees Fahrenheit.
