The Beverage Air SPE36HC-12M Elite Series® prep table is mostly made of stainless steel on the exterior, while the interior is lined with corrosion-resistant aluminum. It has two self-closing doors that can stay open at 120 degrees for product loading and cabinet cleaning. Removable for cleaning, the doors are field reversible with snap-in door gaskets. Evaporator air is recirculated and forced under the pans to keep contents cold.

There are four 6-inch casters to move the table, two of which have brakes to secure the unit in place. A 10-inch-wide cutting board spans the length of the unit for prepping pan ingredients and finishing salads and sandwiches; it can be removed for cleaning. Product can be held in the Beverage Air SPE36HC-12M table on four epoxy-coated wire shelves or in the top compartment inside 12 4-inch-deep, sixth-size pans, which are recessed two inches from the top of the cabinet.
